Preparation Time: 1 hour- 1.5 lbs chicken thighs, bone-in (or boneless, cut into chunks)
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 tbsp grated ginger
- 2 tomatoes, diced
- 1 cup coconut milk
- ½ cup chicken broth
- 1 green chili, finely chopped (optional, for heat)
- 1 tsp ground turmeric
- 1 tsp ground coriander
- ½ tsp cumin
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lemon wedges (for serving)
Instructions:
- Marinate & Sauté:
- Season chicken with salt, pepper, turmeric, coriander, and cumin. In a large pot, heat olive oil over medium heat. Sauté the chicken pieces until lightly browned, about 5 minutes per side. Remove and set aside.
- Develop the Base:
- In the same pot, add the sliced onions, garlic, and ginger. Sauté until soft and translucent (≈5 minutes). Stir in diced tomatoes and green chili; cook until tomatoes break down, about 3 minutes.
- Simmer:
- Return the chicken to the pot. Pour in coconut milk and chicken broth. Bring to a gentle simmer, cover, and cook for 25–30 minutes until the chicken is tender and flavors meld.
- Finish & Serve:
- Adjust seasoning with salt and pepper. Garnish with fresh cilantro and serve with lemon wedges. Enjoy with steamed rice or flatbread.
