How To Cook/Prepare Turkish Imam Bayildi (Stuffed Eggplant)

Origin:
Imam Bayildi is a celebrated Turkish dish whose name translates to “the imam fainted,” supposedly because the dish was so delicious it left him speechless. This vegetarian delight is made by slowly braising eggplants stuffed with a savory mixture of tomatoes, onions, and garlic in olive oil. Rooted in Ottoman culinary traditions, Imam Bayildi reflects the Turkish love for intricate flavors, delicate spices, and the communal sharing of meals.

Ingredients

  • Servings: 4
    Preparation Time: 50 minutes

    • 2 large eggplants
    • 1 large onion, thinly sliced
    • 3 cloves garlic, minced
    • 2 tomatoes, diced
    • 1 red bell pepper, chopped
    • 1/4 cup olive oil (plus extra for drizzling)
    • 1 tsp dried oregano
    • ½ tsp cumin
    • Salt and pepper to taste
    • Fresh lemon juice (optional)
    • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Eggplants: Cut the eggplants in half lengthwise and score the flesh in a diamond pattern (without piercing the skin). Sprinkle lightly with salt and let sit for 15 minutes. Rinse and pat dry.
  2. Cook the Filling: In a large pan, heat olive oil over medium heat. Sauté the onions until soft, then add garlic, tomatoes, and red bell pepper. Stir in oregano, cumin, salt, and pepper, and let the mixture simmer for 10 minutes until well combined.
  3. Stuff the Eggplants: Place the eggplant halves in a baking dish, skin-side down. Spoon the vegetable mixture generously into the cavities. Drizzle a little extra olive oil and a squeeze of lemon juice on top.
  4. Bake: Cover with foil and bake at 375°F (190°C) for 25-30 minutes until the eggplant is tender.
  5. Serve: Garnish with chopped parsley and serve at room temperature as a light, refreshing lunch or as part of a mezze platter.
