Ingredients

    • 2 pita breads, toasted and broken into pieces
    • 2 cups mixed greens (romaine, arugula)
    • 1 cucumber, diced
    • 2 tomatoes, diced
    • 1 red bell pepper, thinly sliced

    • ¼ cup fresh mint leaves, roughly chopped
