Preparation Time: 20 minutes- 2 pita breads, toasted and broken into pieces
- 2 cups mixed greens (romaine, arugula)
- 1 cucumber, diced
- 2 tomatoes, diced
- 1 red bell pepper, thinly sliced
- ½ red onion, thinly sliced
- ¼ cup fresh mint leaves, roughly chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp sumac
- Salt and pepper to taste
Instructions:
- In a large bowl, combine mixed greens, cucumber, tomatoes, bell pepper, red onion, and mint.
- In a small bowl, whisk together olive oil, lemon juice, sumac, salt, and pepper.
- Pour the dressing over the vegetables and toss gently until evenly coated.
- Just before serving, add the toasted pita pieces to maintain their crunch.
