Origin:
Chilaquiles is a traditional Mexican breakfast dish with roots dating back to Aztec times. The name comes from the Nahuatl word chīlāquilitl, meaning “chili-soaked.” Originally, it was a way to use leftover tortillas, softening them in spicy sauces and topping them with cheese and eggs. Today, it is a staple in Mexican households and restaurants, with regional variations using red (rojo) or green (verde) salsa. It is commonly served in Mexico City, Guadalajara, and Puebla, enjoyed as a comforting yet flavorful start to the day.
